Mediterranean Chicken


Mediterranean Chicken

1/2 Jar of Sundried Tomatoes, rinsed and sliced  $1.25
3 Chicken Breasts, sliced thin $4.42
2 TBS Olive Oil
3 tsp Minced Garlic (I use the stuff in the jar)
1/2 tsp salt
1/2 tsp pepper
1 tsp Italian Seasoning
2 TBS sliced Green Olives (I used approximately 5 large ones) $0.50 (estimate including all seasoning)
1/2 Cup Chicken Broth  $0.50
2 TBS White Wine Vinegar
2 tsp dried Parsley
1/2 Cup Sour Cream $0.75
1 Cup Milk
1/2 tsp Salt
1-1/2 TBS Flour
1/4 Water
1/2 Bag Wacky Mac $0.30
  1. Prepare noodles as directed on package.
  2. Heat Olive Oil in a skillet over medium-high heat.  Add Chicken and Garlic and season with salt, pepper, and Italian season. Stir in tomatoes, olives, broth, white wine vinegar, and parsley.  Reduce heat to low and continue cooking until chicken is no longer pink.  Remove chicken from sauce and stir sour cream, milk, and salt into sauce. 
  3. Whisk the flour and water in a small bowl.  Increase heat to medium and whisk in flour mixture.  Continue stirring until sauce is thickened.  Return chicken to sauce and cooked pasta.  Sprinkle with Parmesan Cheese and enjoy!
Total Cost:  $7.72 or $1.29 per serving!

My family loved this dish!  Everyone had seconds (my toddler who is the pickiest eater had four servings!)  This is a super easy and yummy dish that appears to take more work and time than it actually does.  The only thing I regret is there are rarely any leftovers.  We served ours with Parmesan herbed potatoes.  Yummy!

    1/3 Cup Shaved Parmesan $0.50
     
    Total Cost:  $2.45 or 41 cents per serving
Total Cost of Meal:  $10.17 or $1.70 for each serving!

Free Jolly Time Popcorn


Head on over to Jolly Time's Facebook page and like them for a possible free product coupon.  If they receive 30,000 likes by September 19th they will be giving free product coupons on September 20th.  So head on over for some possible free popcorn.  So far they are up to $1.50 off! 

Tuna Pasta Salad



Tuna Pasta Salad

2 - small cans of Tuna drained   $1.50
1/2 bag of pasta (I use Wacky Mac Twists)  $0.25
1 large tomato chopped $1.35
1 medium onion chopped $0.60
1 to 1-1/2 cups Mayo (enough to moisten pasta) $0.50
1/2 tsp salt
1/8 tsp pepper
1 TBS dill weed
  1. Bring a large pot of salted water to a boil and prepare noodles as directed on the package.  Drain and set aside
  2. In a large bowl mix mayo, salt, pepper, and dill weed.  Add tuna, onion, and tomato and mix well.  Add noodles and coat well. 
  3. Cover and refrigerate for 2-4 hours to blend flavors and chill.
This is a great quick to prepare meal and you can add whatever your family likes or omit anything they don't.  Cucumbers, celery, cheese, broccoli, etc are all great additions to this dish.  This is a scaled down version (approximately 6 servings) and the recipe can easily be doubled to make larger batches.  ENJOY!

Total Cost:  $4.20 or approximately 70 cents per serving. 

Publix Savings 9-10-11

This week I saved 45% and did not use many coupons at all.  I am shopping week by week and using the reserves from the freezer (which is becoming might bare!).  My husband goes for a last and final test on Tuesday.  They still want us to be there by October 3rd, but I am hoping the offer to start October 17th still stands.  We are getting down to the wire here and before we know it October will be here.  I still have lots of planning and organization to do plus we still need to give our employers notice if they decide to extend the final job offer to him.  Not to mention it is a 24 hour drive from where we currently are!  It will be nice to be back to normal so I am hoping that we will have the final answer by the end of next week.  All in all I think I did well for all the items I bought and am happy to have some good fresh produce in the house :)
