Super Easy Cheesy Enchiladas

Tonight was one of those nights when you go to pull the meat out of the fridge and it was pushed back too far so it was frozen.  I am still getting use to the new fridge and it aparently works a little too well sometimes.  So instead of my planned dinner of sausage and penne we has these Super Easy Cheesy Enchiladas.  Makes me happy to have the stockpile I have because everything I needed was on hand and I did not have to run to the grocery store.  We served ours with Saffron Rice and Tortilla Chips on the side.  I topped mine with sour cream and everyone else ate them plain.  You can always top them with whatever you like (black olives, tomatoes, salsa, guacamole, etc). 

Super Easy Cheesy Enchiladas

~  1 large onion diced (optional) $0.40 (bought these right before thanksgiving on a great sale!)
~  2 cans of enchilada sauce (you can make this if you prefer) $1.20 (Picked these up @ Target on   clearance a few months ago and finally am using them!)
~  16 oz shredded cheese  $3.74
~  8 tortillas flour or corn (my kids prefer flour) $1.50
~  Vegetable oil
  1. If you are using corn tortillas you will want to dip your tortillas in hot vegetable oil to make sure they are coated and warmed (3 quick dunks using tongs).  If using flour tortillas you can omit this step.
  2. Dip tortillas in warmed enchilada sauce (important DO NOT skip this step!) and set on a plate to cool for a minute.
  3. Add cheese and onion in the middle of each tortilla, roll, and place seam side down in baking dish. 
  4. Do this for all eight and then top with remaining sauce and cheese.
  5. Bake in preheated 350 degree oven for approximately 25 minutes or until cheese is melted and sauce is bubbly.
This dish is super easy and incredibly affordable.  The cheese will be the main bulk of the cost and you can save even more money by making your own sauce!  Enjoy!

Total Cost:  $6.84 or $1.71 per serving!

Holiday Fun

KCP&L Lighting Ceremony

I hope everyone had a fabulous Thanksgiving!  My family and I enjoyed spending ours together with a great feast and then went out to watch the KCP&L Lighting Ceremony.  We had a fabulous time and I couldn't ask for a better day.  My daughter was even on Fox4 news talking about the ceremony.  I don't do Black Friday so I slept in until 10!  That never happens and I am excited I was able to.  Today we are taking it easy and maybe going out to lunch and hanging out at a park for the afternoon.  For all you Black Friday shoppers I hope you found the deals you were seeking and for the rest I hope you enjoy a relaxing holiday weekend with the ones you love!

Pumpkin Pie


 


Pumpkin Pie

3/4 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 large eggs
1 can 100% Pure Pumpkin
1 can Evaporated Milk1 unbaked 9-inch (4-cup volume) deep-dish pie shell

  1. MIX sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.
  2. POUR into pie shell.
  3. BAKE in preheated 425° F oven for 15 minutes. Reduce temperature to 350° F; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving.

Sweet Potato Souffle

Sweet Potato Souffle

3 sweet potatoes; peeled, diced, and cooked (can use canned if you prefer)
1/2 stick butter melted
1/2 TBS Vanilla
1/2 tsp salt
2 eggs
1/4 cup brown sugar
1/4 tsp ground nutmeg
1 tsp cinnamon
Mini marshmallows
  • Mix everything except marshmallows and place in a 9x13 baking dish.  Bake 30 minutes in a 350 degree oven.
  • Top with marshmallows and return to the oven until marshmallows are lightly browned      and slightly melted about 2-5 minutes.  Don't leave in too long the marshmallows will disappear!


Gravy

2 cups turkey stock (I have some leftover in the freezer from a couple of weeks ago)
2 TBS butter
2 TBS flour
  1. Melt butter over medium high heat and add flour.
  2. With a whisk combine until all flour is mixed in and continue whisking while cooking for 1 minute
  3. Slowly add turkey stock and whisk continuosly.  Bring to a boil and allow to boil while whisking for 1 minute.

Moist and Savory Stuffing

2 1/2 cups Swanson® Chicken Broth
Generous dash ground black pepper
1TBS Butter
2 stalks celery, coarsely chopped (about 1 cup)
1 large onion, coarsely chopped (about 1 cup)
1 pkg. Pepperidge Farm® Herb Seasoned Stuffing
  1. Saute celery and onion in butter over medium-high heat.  Cook for 5 minutes or until the vegetables are tender, stirring often.
  2. Add broth and pepper to the vegetables and bring to a boil. 
  3. Add the stuffing, remove from heat, and mix lightly.
  4. Spoon the stuffing mixture into a greased 3-quart shallow baking dish. Cover the baking dish and bake at 350°F. for 30 minutes or until the stuffing mixture is hot.

Glazed Baby Carrots


Glazed Baby Carrots

1 (16 ounce) package baby carrots
1/2 cup butter
3 tablespoons honey
1/2 cup brown sugar

  1. Place the carrots into a large pot and cover with salted water. Bring to a boil over high heat until tender, about 25 minutes. Drain and allow to steam dry for a minute or two.
  2. Return the pot to the stove; reduce the heat to medium-low. Melt the butter in the pot. Stir in the honey and brown sugar; add the carrots and stir until evenly coated; cook another 15 minutes               

Green Bean Casserole

1 (10 3/4 oz.) canCAMPBELL'S® Cream of Mushroom Soup
3/4 cupmilk
1/8 tsp.black pepper
2 cans french cut green beans, drained 
1 1/3 cups FRENCH'S® Original Fried Onions
  1. MIX soup, milk and pepper in a 1 1/2 -qt. baking dish. Stir in beans and 2/3 cup French Fried Onions. 
  2. BAKE at 350°F for 30 min. or until hot.
  3. STIR. Top with remaining 2/3 cup onions. Bake 5 min. until onions are golden.

Corn Pudding



Corn Pudding

1 15 oz can whole kernel corn, drained
1 15 oz can cream corn
1 stick butter, melted
1 8 oz container sour cream
2 beaten eggs
1 box Jiffy Corn Bread mix
1/2 tsp salt
  1. Preheat oven to 350°F
  2. Mix corn, sour cream, salt, and beaten eggs.  Add melted butter to mixture and mix well.
  3. Stir in corn bread mix and bake for 45-60 minutes or until set and lightly golden



                                               

Loaded Mashed Potato Casserole

This is my husbands favorite Thanksgiving recipe.  I only make these for holidays because they aren't really healthy for you.  But they are fantastic!  This is the McCormick recipe which I have been using for years.


Loaded Mashed Potato Casserole

5-1/2 mashed potatoes about 4 pounds potatoes before mashing (I prepare these the day before)
1/2 cup milk
1 package (8 ounces) cream cheese, softened
1 cup sour cream
2 teaspoons Parsley Flakes
1 teaspoon Garlic Salt
1/4 teaspoon Ground Nutmeg
3/4 cup shredded Cheddar cheese
12 slices bacon, crispy cooked and crumbled (about 1/2 cup)

1. Preheat oven to 350°F. Place all ingredients, except cheese and bacon, in large bowl. Beat with electric mixer on medium-high speed until potatoes are smooth and creamy.

2. Spoon mixture into lightly greased 13x9-inch baking dish. Sprinkle with cheese and bacon. If you prefer extra crispy bacon, reserve bacon and sprinkle at the end of cooking. Cover.

3. Bake 30 minutes or until heated through.


Thanksgiving Meal Plan


Thanksgiving is by far my most favorite holiday.  I love to cook, gather with loved ones, and of course eat!  This year will be a little different.  We are very new here so we have not made any friends and we do not have any family here.  But that is alright because we can still enjoy each others company and enjoy a delicious meal.  I will plan to continue with all my traditional Thanksgiving dishes, but on a scaled down level because lets face it the only ones eating will be my husband, daughter, and myself.  My three year old is a grazer so I don't expect him to eat much of anything (as usual).  Below is my meal plan and recipes for everything except the turkey breast and dinner rolls.  Enjoy!

Vegetable Soup

Surprise!  I made soup for dinner again.  I know I have said this multiple times already,  but I am loving this chilly weather and all the comfort food.  I really missed enjoying warm homemade soup on a cold night.  Soup just doesn't taste as good when it is 90 degrees outside ;)  So tonight I made vegetable soup and it was fantastic!

YUM!  You can even see the steam :)

Vegetable Soup
2 Cans Beef Broth $0.76
1-1/2 Cups V8 Vegetable Juice $0.50
1 16-oz bag Mixed Vegetables $0.50
2 Large Potatoes diced $0.10
1/2 Box Penne (or whatever you have on hand) $0.20
3 Stalks of Celery (diced) $0.15
1 Can Diced Tomatoes (undrained)  $0.73
1/4 tsp Dried Thyme
1/8 tsp Black Pepper
1/4 Cup Instant Potatoes (add to your desired consistency or leave out) $0.15
  1. This is super easy...combine everything except pasta and instant potatoes in a crockpot and cook on low for 8 hours :)  Cook pasta according to package and add pasta and instant potatoes to soup approximately 30 minutes before serving. Enjoy!
Total Cost:  $3.09 or 39 cents per serving

Serve with crackers, sandwiches, or bread and butter :)

Sorry I have not posted any deals.  Tomorrow I will weed through them and see what is available and try to catch up.  Today we had a wonderful family day exploring the area.  Since we have only been here for a month we are still learning about the history and enjoying getting to know the area.  We spent the morning at Missouri Town 1855 which was full of wonderful historical buildings and people in period dress explaining the way of life during that time period.  My son and daughter were able to play music with one of the tavern workers and they had a blast! There was so much to see and do there with so many educational opportunities that I highly recommend it if you are in the area.  Not to mention how affordable it is ($5 for adults and $3 for kids 5-12).  Almost across the street there is an observation area where you can see deer, elk, and bison too!

After that we headed out to find a perfect spot for lunch.  We brought the Hormel party tray I bought from Hen House for $4.99 after coupons and threw in a couple juice boxes and cans of pop, can't beat that!  We found a small park off the side of the road with a playground and lake in the background.  So after we finished eating we were able to play for bit :)

We then drove around for a while just exploring and enjoying being together.  After we had dinner we went out and looked at some Christmas light displays in the Kansas City area before heading home.  So it has been a very busy, but wonderful day.  It's not often we get this time to spend together so I took advantage of it and hope everyone understands why I took the day off.  Hope everyone has had a spectacular Saturday!
