Spinach and Bacon Rolled Flank Steak

This is one of our favorite ways to enjoy flank steak.  You can literally put whatever you like in the filling.  I have done it with fresh spinach, tomatoes, cheese, red peppers, and all types of various combinations.  This is a great base to get you started.  Play with it and find your favorite combination!

Paired with a baked potato and you have dinner done!
I ran out of kitchen twine, but toothpicks worked great even though they aren't pretty
Spinach and Bacon Rolled Flank Steak
1 1/2 lbs flank steak, pounded 1/4 in thick
2 TBS balsamic vinegar
2 TBS olive oil
3 cloves garlic, minced
1/2 tsp salt
1/2 tsp pepper
10 frozen spinach, thawed and squeezed dry
1 TBS olive oil
1 small onion, diced fine
3 cloves garlic, minced
6 slices bacon, cooked and crumbled
1/4 tsp salt
1/4 tsp pepper
1 pinch red pepper flakes

  • In a small bowl combine balsamic vinegar, olive oil, salt, pepper, and 3 cloves of minced garlic
  • Place steak in a ziploc bag and pour marinade over the steak
  • Massage into steak and refrigerate overnight
  • When ready to prepare heat 1 TBS olive oil in a skillet over medium-high heat
  • Add onion and garlic and cook until softened, about 3 minutes
  • Add spinach, bacon, salt, pepper, and pepper flakes and cook until heated through
  • Spread mixture over the flank steak and roll up
  • Secure with kitchen twine (or toothpicks), place in a baking dish, and cook for 35 minutes in a 375 degree oven
Pretty simple!  This is such a great recipe and it always impresses.  I love recipes that look like I spent an enormous amount of time even though I didn't.  Try this one and get creative :)
