Dill Potato Salad
2 lbs potatoes, cut into bite sized pieces
1/2 cup low fat mayonnaise
1/4 cup fat free sour cream
1 TBS dijon mustard
1 TBS dried dill weed
2 green onions, chopped
1/2 tsp salt
1/4 tsp pepper
1/4 tsp pepper
- Place potatoes in a large pot and cover with water
- Bring to a boil over high heat, then turn down to medium-low and cook until tender, but firm (about 10-15 minutes)
- Drain and cool
- In a small bowl combine mayonnaise, sour cream, mustard, dill weed, and onion
- Season with salt and pepper
- Pour mixture over potatoes and toss to coat, adjust seasoning as needed
- Refrigerate for at least 2 hours to blend flavors
Who knew something so basic would make everyone so happy?!? But it works so I'm not going to complain :)

Have tried a similar reciipe, but the recipe did not call for the sour cream. It was good but now I need to try this! Love potato salad, so many wonderful variations!
ReplyDeleteI love all potato salad! Unfortunately my family doesn't. This is the first one that everyone actually enjoys. I really like the sour cream added in. It gives it a slight tang that is really good!
