Unstuffed Pepper Skillet
2 Green or Red Peppers, seeded and diced
1/2 Large Red Onion, diced
3 Cloves Garlic, minced
1 lb Ground Beef
1/2 cup Long Grain Rice, uncooked
1 tsp Dried Basil
1 tsp Dried Oregano
1/2 tsp Ground Black Pepper
1 TBS Worcestershire Sauce
2 Cups Low Sodium Original V8
- Brown the ground beef, seasonings, and onion in a large skillet until cooked and no longer pink then drain the grease
 - Add vegetable juice, Worcestershire, garlic, and rice bring to a boil and then reduce heat to low, cover, and cook for 10 minutes
 - Stir in green pepper, cover, and cook for 10 minutes or until rice is tender and most of the liquid is absorbed
 
See nothing to it!  Now I can enjoy one of my favorite dishes any night of the week :)
Not to mention this is really low in fat, low calorie, and loaded with great vitamins and nutrients.  You could probably make it better by using ground turkey too!
