Dinner on a Dime (Balsamic Chicken Pasta)


Balsamic Chicken and Pasta

3/4 Cup Balsamic Vinegar  (free)
1/2 Cup Olive Oil $0.90
1 tsp. Minced Onion
1/2 tsp Crushed Red Pepper
1 TB Fresh Minced Garlic
1/4 tsp Salt
1/4 tsp Pepper
1/4 tsp Rosemary
1/4 tsp Parsley
1/2 tsp Oregano
1 - 14 oz Can of Fire Roasted Diced Tomatoes $0.50
1-3/4 lbs Boneless Skinless Chicken Breasts $3.58
1 Package Whole Wheat Rotini $0.40
  • Combine first 10 ingredients in plastic storage bag
  • Cut chicken into thin strips
  • Place chicken in marinade and put in fridge for at least 4 hours or overnight if possible
  • Add chicken, diced tomatoes, and marinade to a skillet and cook over medium heat until chicken is fully cooked
  • While chicken is cooking bring a large pot of water to a boil for pasta and cook pasta until done
  • Combine cooked  pasta, chicken, and marinade and heat through
  • Top with Parmesan Cheese or Mozzarella
I served mine with Parmesan Cheese (free), a package of steamed snap peas ($0.70), and crescent rolls ($0.75)

That is an entire meal for $6.83 or $1.14 per serving!
