Dinner on a Dime - Chicken Enchiladas















Chicken Enchiladas

1 lb Chicken $1.99
1 container Philadelphia Santa Fe Cooking Creme free
1 can RoTel Tomatoes (drained) $0.30
6 Flour Tortillas $1.00
8 oz Shredded Cheese $1.50
1 can Enchilada Sauce $1.19
Adobo Seasoning
  1. Place chicken in saucepan and cover with water.  Boil for about 20-25 minutes or until chicken is no longer pink.
  2. Drain and shred chicken.  Add 2 TBS Adobo, can of drained RoTel, and cooking creme to chicken.
  3. Fill tortillas with chicken mixture and top with cheese.  Fold and place in a 9x13 baking dish.  Top with Enchilada sauce and cheese then bake in a preheated 350 degree oven for 20 minutes or until cheese is melted and bubbly.
We served ours with yellow rice on the side which cost 50 cents.  Everyone seemed to enjoy it and it really was not difficult to make even though it was somewhat time consuming.  I suppose you could dice the chicken, but I really like shredded chicken in dishes like this.  It just seems to hold the flavor better in my opinion :)

Total Cost of the meal:  $6.48 or $1.08 per serving!
