Chicken Enchiladas
1 lb Chicken $1.99
1 container Philadelphia Santa Fe Cooking Creme free
1 can RoTel Tomatoes (drained) $0.30
6 Flour Tortillas $1.00
8 oz Shredded Cheese $1.50
1 can Enchilada Sauce $1.19
Adobo Seasoning
- Place chicken in saucepan and cover with water. Boil for about 20-25 minutes or until chicken is no longer pink.
- Drain and shred chicken. Add 2 TBS Adobo, can of drained RoTel, and cooking creme to chicken.
- Fill tortillas with chicken mixture and top with cheese. Fold and place in a 9x13 baking dish. Top with Enchilada sauce and cheese then bake in a preheated 350 degree oven for 20 minutes or until cheese is melted and bubbly.
Total Cost of the meal: $6.48 or $1.08 per serving!
