Mediterranean Chicken


Mediterranean Chicken

1/2 Jar of Sundried Tomatoes, rinsed and sliced  $1.25
3 Chicken Breasts, sliced thin $4.42
2 TBS Olive Oil
3 tsp Minced Garlic (I use the stuff in the jar)
1/2 tsp salt
1/2 tsp pepper
1 tsp Italian Seasoning
2 TBS sliced Green Olives (I used approximately 5 large ones) $0.50 (estimate including all seasoning)
1/2 Cup Chicken Broth  $0.50
2 TBS White Wine Vinegar
2 tsp dried Parsley
1/2 Cup Sour Cream $0.75
1 Cup Milk
1/2 tsp Salt
1-1/2 TBS Flour
1/4 Water
1/2 Bag Wacky Mac $0.30
  1. Prepare noodles as directed on package.
  2. Heat Olive Oil in a skillet over medium-high heat.  Add Chicken and Garlic and season with salt, pepper, and Italian season. Stir in tomatoes, olives, broth, white wine vinegar, and parsley.  Reduce heat to low and continue cooking until chicken is no longer pink.  Remove chicken from sauce and stir sour cream, milk, and salt into sauce. 
  3. Whisk the flour and water in a small bowl.  Increase heat to medium and whisk in flour mixture.  Continue stirring until sauce is thickened.  Return chicken to sauce and cooked pasta.  Sprinkle with Parmesan Cheese and enjoy!
Total Cost:  $7.72 or $1.29 per serving!

My family loved this dish!  Everyone had seconds (my toddler who is the pickiest eater had four servings!)  This is a super easy and yummy dish that appears to take more work and time than it actually does.  The only thing I regret is there are rarely any leftovers.  We served ours with Parmesan herbed potatoes.  Yummy! 

    1 - small bag of potato inspirations potatoes $1.45
    1/4 Cup Olive Oil
    1-1/2 tsp Italian Seasoning
    2 tsp minced garlic  $0.50
    1/3 Cup Shaved Parmesan $0.50
     
    Total Cost:  $2.45 or 41 cents per serving
Total Cost of Meal:  $10.17 or $1.70 for each serving!
