Santa Fe Chicken

I am back!  I was so busy the last couple of weeks, but I am happy to be in our new place.  It has so much more room and is 10 times nicer than the apartment we were in.  It's been so hectic the past couple of weeks that I haven't been cooking or doing much of anything other than packing, moving, unpacking, and cleaning.  Needless to say I am incredibly happy to be back in the kitchen and cooking again.

I am still in the process of organizing and unpacking so today I decided to make a crock pot meal that would allow me to focus more on the house today.  We decided to make burrito bowls with our chicken, but you could easily use this for burritos or just eat as is.  Anything goes ;)



Santa Fe Chicken Adapted from Mamavation recipe for Crock Pot Santa Fe Chicken
1 can Black Beans, drained and rinsed
1 can Corn, drained
1 can Diced Tomatoes (with juice)
1 small Onion, diced
1/2 TBS Minced Garlic
1-1/2 cups Chicken Broth
1/2 tsp Salt
1/2 tsp Black Pepper
1 tsp Paprika
1 tsp Onion Powder
1 tsp Granulated Garlic
1 tsp Ground Cumin
1/4 tsp Cayenne Pepper (more if you like it spicy)
1 lb Chicken Breasts 
Adobo Seasoning to season chicken (here's a recipe for Adobo Seasoning)
  • Mix everything except chicken and adobo seasoning together in a crock pot 
  • Season chicken with Adobo and place on top of veggie mixture in crock pot
  • Cook on high for 6 hours
  • Remove chicken and shred then return to the mixture and combine well
This is great over some rice and topped with cheese, sour cream, and guacamole.  YUM!  Or you can wrap it up in a tortilla with whatever toppings you prefer and enjoy a nice burrito.
