I made some slight changes to the recipe. Mainly the preparation because we have a grill now, but I have not been able to put it together yet. That seemed like too much of a hassle for dinner tonight so I decided to change the preparation method. I also made a few slight adjustments to our liking, but nothing too major ;)
Chicken w/ Spinach & Mozzarella
3 Large Boneless Skinless Chicken Breasts, trimmed and cut in half lengthwise
Salt and Pepper to taste
2 TBS Minced Garlic
2 TBS Olive Oil
10 oz Frozen Spinach, thawed and drained
Shredded Mozzarella
Roasted Red Peppers, cut into strips (about 2)
- Preheat oven to 400 degrees
- Heat 1 TBS of olive oil over medium heat in a large skillet
- Season chicken with salt and pepper and then cook for about 5-7 minutes per side or until no longer pink
- Meanwhile heat 1 TBS olive over medium-high heat in a small saucepan
- Add garlic and cook until fragrant, about 1 minute
- Add spinach then salt and pepper to taste and cook until heated through, about 5 minutes
- When chicken is done place on a lined cookie sheet, then top with spinach, shredded mozzarella, and pepper strips
- Bake for 8 minutes or until cheese is melted
This is so quick and delicious. It's such a fantastic way to enjoy chicken. Not to mention it is good for you too!
