I am so excited for this month's SRS! Every month I have been getting the coolest partners! This month I was assigned to Jenni's Ferris Wheel of Food. She has a ton of great recipes and it was so hard to choose one. I have saved and pinned quite a few to try out in the future!
I have been in a summery mood...not really sure why, but my cooking has been reflecting it. Lots of fresh pasta salads, veggie salads, and fruit have been on the menu. When I saw this recipe for Banana Ice Cream I knew it was perfect for my mood. Not to mention I had about 8 frozen bananas in the freezer begging me to do something with them.
This was an amazing idea and was a huge hit! Chocolate, peanut butter, and banana in a wonderfully creamy frozen treat...what's not to love?!? The best part is this is totally customizable. Add chocolate chips, strawberries, candies, nuts, or leave it alone and enjoy it plain! I better stock up on some bananas because I see this recipe making a constant appearance this summer :)

Chocolate Peanut Butter Ice Cream source Jenni's Ferris Wheel of Food
8 Frozen bananas, cut into pieces
1/2 cup peanut butter
3 TBS cocoa powder
- Place bananas, peanut butter, and cocoa powder in the food processor (or blender) and blend until creamy
- Scrape down the edges as necessary and make sure everything is fully combined and smooth
- You can serve now (it will have a great soft serve texture!) or scoop it into a container and freeze for about 3-4 hours for a harder ice cream
Now isn't that simple?!? You really can't get any easier than that. Get creative, have fun, and most importantly ENJOY!
