Loaded Twice Baked Potato Casserole
8-10 medium potatoes, scrubbed and dried
olive oil
salt
1 lb bacon, cooked and crumbled
2 cups sour cream
2 cups mozzarella cheese
2 cups cheddar cheese
1/4 cup sliced green onions
salt and pepper to taste
- Rub potatoes with olive oil and salt liberally
- Bake in a preheated 400 degree oven for 60-90 minutes or until tender
- When potatoes are cool enough to handle dice into 3/4 inch cubes
- Place half of the potatoes in a greased 9x13 pan (I greased mine with a couple TBS of bacon grease)
- Salt and pepper to taste
- Top with half the bacon and green onions
- Place dollups of sour cream (about 1 cup) and then 1/2 the mozzarella and 1/2 the cheddar cheese
- Repeat the layers one more time (at this time you can cover and refrigerate to bake later)
- Bake uncovered in a preheated 350 degree oven for 20-25 minutes or until cheese is melted
It takes a bit of work, but it is worth it! This really is a delicious dish that can be topped with whatever you like. I think next time I may add some broccoli too....yum!
