Poor Man's Stroganoff


This is an old recipe we used to eat quite frequently growing up.  It is super simple, easy, and affordable.  You can't beat that for a great, tasty weeknight meal!  I've made it without the cream cheese and have added dill for a twist.  Another plus is this dish makes for great leftovers.

I topped mine with a little dill...I'm weird like that ;)


Poor Man's Stroganoff
1 lb ground beef
1 small onion, diced
8 oz sour cream
4 oz cream cheese
1 can cream of mushroom soup
4 oz sliced mushroom, drained
1 tsp garlic salt
1/2 tsp pepper
2-3 cups cooked egg noodles or macaroni whatever you have will work fine
  • Brown ground beef with onion and drain off fat
  • Add cream of mushroom soup, mushrooms, garlic salt, and pepper to ground beef and cook over medium heat until heated through, about 10 minutes
  • Remove ground beef mixture from heat and add sour cream and cream cheese
  • Mix the beef mixture with the noodles and enjoy!
Considering I hate mushrooms, but still love this dish says something.  It is just a good comforting meal.  Creamy, beefy, and just plain yummy!
