Weekly Meal Plan

I am on this get healthy, lose weight kick.  Yeah...we all know how fun those can be right???  The worst part for me is portion control.  Apparently I think portions are much bigger than they actually are.  So to get back on track I have decided to write up a weekly meal plan for the all meals and snacks.  I've taken lots of time to work these plans out, but I know it will be worth it!

Each day consists of 1600-2000 calories per day.  I am keeping my caloric intake up because I workout 2 hours per day on the elliptical.  I need my fuel!  I only am drinking water with a diet cherry limeade now and then (I really have to kick that daily habit!) or a green tea (super good for you and promotes weight loss). 

First, I will show you the meal plan:

See that doesn't look too bad and it looks completely doable :)  Actually, I am excited to start!  Sunday I will do all my shopping, prep my veggies and fruit, boil my eggs, and portion out my servings (ie. granola, cereal, fruit, etc) to help make life easier.  

Below are the items I need for the week.  Most of the stuff I have, but this will give you a good idea on how to create your own list.  It makes shopping a breeze. 

Look at all those fresh yummy ingredients!  

Hopefully this will help give me the kick I need to eating better...the ENTIRE day!  I can't wait and look forward to feeling better and hopefully looking better too ;)

Chicken and Spinach Pasta Bake - Whole Wheat Pasta, Fat Free Cream Cheese, and Reduced Fat Mozzarella

Zucchini Pasta Toss - Whole Wheat Pasta, Greek Yogurt, More Veggies, Tomatoes, Dried Basil, and Dried Parsley

Mediterranean Egg White Omelet - Egg Whites, Less Feta, No Parmesan, Artichokes

Lemon Thyme Chicken w/ Mixed Veggies - More Veggies, Dried Thyme

Stuffed Peppers - No Tarragon, Parsley, Diced Tomatoes (or stewed chopped up? not sure yet), Worcestershire, Swiss Cheese (or provolone whichever I have leftover)

Swedish Meatballs - I am only using the sauce recipe and I will adjust the seasonings a bit.  I am using frozen meatballs that I already have.

  1. your breakfast on Sunday is cut off so that we cannot see what it is. Can you tell us what all is in your scrambled eggs?

    Also can you make the links listed in your meal plan active so that we can click on them and get the recipes?

    1. The eggs are topped with my homemade salsa. Sorry about that and I will work on fixing it :) I can post links to the recipes I have, but I will be giving them makeovers so they will be healthier. The recipes with the changes will be posted as I make them as well. Hope you have a wonderful day and thanks for suggestions :)
