Pork Chop Casserole

Pork chop casserole is an old family favorite.  We used to eat it all the time when we lived with my grandma.  The veggies are always easily changed and you can make it with chicken instead of pork for a totally different recipe.  We always used whatever we had in the garden for the veggies or what we had the most from the canning season.  Sometime asparagus, corn, or even green beans.  Today I used what I had in my freezer.  Broccoli, peas, and pork chops.  It's the perfect one dish meal.  Everything you need is in one dish.



Pork Chop Casserole
4 pork chops (or chicken breasts or thighs)
1 can cream of mushroom soup (cream of celery or chicken work good too)
1 packet onion soup mix
1 cup rice
2 cups water
1/2 cup frozen peas
1 cup broccoli pieces
paprika
seasoning salt
garlic powder
black pepper

  • Mix the mushroom soup, onion soup, water, and rice in a small bowl
  • Pour mixture into a 9x13 glass baking dish
  • Add your vegetables and mix to combine
  • Place pork chops on top of rice mixture and season with paprika, seasoning salt, garlic powder, and black pepper then cover with aluminum foil
  • Bake in a preheated 350 degree oven for 60 minutes, or until pork chops are cooked through
  • Remove foil and return to the oven to bake for about 15 minutes just to brown the top a bit

The perfect comfort meal.  And the best part is you can use whatever you have in your freezer or fridge or find whatever is on sale to make this a frugal one pot dish.  Can't beat that :)

  1. I do something like this for chicken but I coat the chicken in shake n bake :) I have some pork chops so I am going to have to try it out because I always make pork chops the same way and it is getting boring. Thanks for the idea!!

  2. Been making one similar to this for many years, but mine called for dhicken bouillion on top of the chops before sealing it up. Very good. Will give this one a try while we're on vacation. Thanks

    1. Click on the beginning of the recipe, Drag until the last word of the recipe you want to print. Press Ctrl-P (for print), Select Selection and click OK.

  8. This recipe sounds great, but how do I print it? There is no print button for this and I would like to save the recipe.

  9. To print anything Copy the part you want , and paste it into notepad or any word processing program .
    Copy = hold mouse button and highlight your selection . right click on the lit area click copy .
    Paste = go to where you want it and right click paste .
    Control C and Control V also work with no right clicking .

  10. Hubby does not like rice. Could I substitute orzo instead? Would it have time to cook properly in the casserole?

  13. I fix a similar dish using chicken. I buy rice in the bags and cut open 1 bag to use. It is enough for 2 people. Very good. I don't cook the rice first, just mix it with the veggies, soup and the rest of the ingredients, put in the dish and lay the seasoned chicken pieces on top. Thanks for sharing your recipe, I'm going to try with pork chops. : )

  14. I take my pork chops & dip them on both side in Onion Soup Mix & plain Bread Crumbs. Then place on top of the rice. I use instant rice so no cooking beforehand. The original recipe has way to much sodium, so I look for everything in No Salt Added, including my soup.

  15. Please answer the question ... can you sub orzo (cooked or raw) instead of the uncooked rice + water....will orzo cook the same speed as the rice would?

    1. Right click on your mouse and you will see a list of things come up. One is "print". click that and the print preview will come up with the numbered pages. There should be a print box that comes up on the top left also. You will see "all" but you don't want to print all pages. So the next one down says "pages" so you just type in that box 1-2 so it will just print page 1 and page 2. You can tell it what pages to print that way.

    2. Also, you will see the "print" button when you have chosen the pages you want to print. Just click on that and it should print.

    3. 75 min to cook pork chops?? If you don't want dried out chops, use an instant read device and pull from oven at 140-145 degrees. Cooking times are really old school now with the great temp gauges on the market. When you start using them you will never have an under or over cooked meal again.
