Garlic and Herb Roasted Potatoes

When I went shopping last week Aldi had 10# bags of potatoes for 49 cents.  Since I didn't plan any sides I just figured we would be eating lots of potatoes this month at that price :)

I love roasted potatoes.  They are relatively easy and extremely versatile.  I'm not going to lie.  I was feeling rather lazy tonight so I began searching the cupboard for any seasoning mixes that I have left over.  I found a single package of Lipton Garlic and Herb seasoning hidden in the back of the cupboard and figured that would be perfect for my potatoes.



Garlic and Herb Roasted Potatoes
4 large baking potatoes, cubed (about 3/4 inch)
1/3 cup olive oil
1 packet of garlic and herb seasoning
1/2 tsp salt
1/2 tsp black pepper
  • Preheat your oven to 450 degrees
  • Combine all the ingredients in a large bowl and toss well to coat
  • Place potatoes in a single layer on a jelly roll pan (or a very large cookie sheet)
  • Bake for about 45-60 minutes until fork tender and crispy, toss every 20 minutes to make sure they cook evenly
Super easy!  You can really make these with any flavor combinations you like.  Even taco seasoning, onion soup mix, or ranch dressing mix.  Or you can create your own flavor combination with some garlic powder, parsley, basil, oregano, or any other spices or combination you love!  Enjoy!

  1. Yum!!! I love roasted potatoes. I have a rosemary and potatoes recipe that I love too :) My friend turned me on to mixing the potatoes with a packet of Hidden Valley Ranch and that is super yummy too :) I am sure you will find lots of uses for your potato find!!!
