Roasted Cauliflower

Cauliflower is a favorite in our house.  It is a great vegetable that really holds flavors so well.  My youngest isn't too keen on raw veggies (well except carrots) so sometimes roasting them is the best option for us.  I love how simple this dish is, but it still packs tons of flavor without any heavy creams, sauces, or cheeses that you normally find with cauliflower.



Roasted Cauliflower
1 Head of Cauliflower, cut into florets
2 TBS Minced Garlic
2 TBS Olive Oil
1 TBS Lemon Juice (juice from half of a lemon)
Salt and Pepper, to taste
1 TBS Parsley
1/3 Cup Grated Parmesan Cheese
  • Grease a large casserole dish and set aside
  • Place olive oil, lemon juice and garlic in a large plastic bag then shake to combine
  • Add cauliflower and shake well to combine
  • Place cauliflower in the prepared casserole dish then season with salt, pepper, and sprinkle parsley evenly
  • Bake in a preheated 400 degree oven for about 20-30 minutes or until cauliflower is for tender, stirring halfway through cooking
  • Top with parmesan cheese and broil for about 2-4 minutes or until golden brown if you like (we just top it with cheese and let it melt while it cools)
Such an easy and delicious way to enjoy more fresh veggies.  Even if you think you don't like cauliflower I bet you will enjoy this dish.  It really holds the flavors so well and tastes so fresh!
