Roll-ups

We've been super busy the past few weeks.  Last weekend we went out of town (spur of the moment type trip) to Nebraska, then back home.  Started the week with dentist appointments, then an orchestra concert, ice cream social, and this weekend we went to an air show in Missouri.  It's all been good, but now I am ready for an easy quick meal...I guess you can call it that ;)

Everyone loves roll-ups in our house.  I tend to make a variety because everyone loves them so much.  They are super simple to make and really you can put whatever you want inside.  That is the beauty of the roll-up :)

Get creative!  Put whatever you like inside and enjoy!  We even do banana, peanut butter, and a drizzle of honey for a nice sweet treat.  The combinations are endless.

Salsa Roll-Ups and Polish Rose Roll-Ups
Roast Beef and Swiss Roll-Ups


Salsa Roll-Ups
4 oz Reduced Fat Cream Cheese, softened
1/4 Cup Salsa
1/2 Cup Shredded Cheese
1/4 tsp Chili Powder
4 - 6 inch Tortillas

  • Mix cream cheese, salsa, and chili powder then set aside
  • Meanwhile stack tortillas on a microwavable plate, cover with plastic wrap (roll up 1 side to vent), and cook for 20-30 seconds or until just heated
  • Spread cream cheese mixture on tortillas then sprinkle shredded cheese
  • Tightly roll up and store in refrigerator until ready to serve
  • Before serving cut into 1/2 inch pieces

Polish Rose Roll-Ups
Now this one is a tad different than a standard polish rose, but we like them with the tortilla too so I figured why not?!?

4 oz Reduced Fat Cream Cheese, softened
1/4 lb Deli Sliced Ham
3-4 Green Onions, chopped
4 - 6 inch Tortillas
  • Stack tortillas on a microwavable plate, cover with plastic wrap (roll up 1 side to vent), and cook for 20-30 seconds or until just heated
  • Spread the cream cheese in the tortilla
  • Sprinkle with green onion
  • Layer with ham
  • Roll-up tightly and store int he refrigerator until ready to serve
  • Before serving cut into 1/2 inch pieces

Beef and Swiss Roll-Ups

1/4 lb Deli Sliced Roast Beef
1 Cup Baby Spinach
6 Slices of Swiss Cheese
4 - 6 inch Tortillas
  • Mix cream cheese and garlic then set aside
  • Stack tortillas on a microwavable plate, cover with plastic wrap (roll up 1 side to vent), and cook for 20-30 seconds or until just heated
  • Spread cream cheese mixture over tortilla 
  • Top mixture with layers of roast beef, spinach, and cheese
  • Tightly roll up and store in the refrigerator until ready to serve
  • Before serving cut into 1/2 inch pieces
