Brown Sugar Banana Bread

Have you all seen this beautiful brown sugar banana bread recipe on pinterest yet?!?  It looks fabulous!  I had 3 very large over ripe bananas sitting on my counter that were getting ready to be cut up and thrown into the freezer until I found this recipe.  Needless to say everyone in my house was definitely happy I found this recipe!

Incredibly moist and the sugar content creates a yummy, crunchy, sugary crust!

3 very large ripe bananas, mashed
1 cup brown sugar
1/2 cup butter, softened
1 egg
1 tsp vanilla
1 tsp cinnamon
1 pinch nutmeg
1 pinch allspice
1/4 tsp ground ginger
1/4 cup milk
2 cups all-purpose flour
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt

  • Preheat oven to 350 and grease a loaf pan
  • Place the brown sugar and butter in a large bowl
  • Mix with mixer on medium speed for 1-2 minutes or until light and fluffy
  • Add the bananas, egg, vanilla, cinnamon, nutmeg, allspice, ginger, and milk then beat on medium speed until fully combined
  • In a small bowl whisk together flour, baking soda, baking powder, and salt
  • Add 1 cup of flour mixture to the wet ingredients and beat on low speed until combined
  • Gradually add flour mixture 1/2 cup at a time making sure to fully combine between each addition
  • Pour batter into the prepared pan and bake until a toothpick (I use a butter knife) inserted in the center comes out clean, about 60 minutes (Check and add time as needed this time it took 70 minutes for me)
The smell of baking banana bread is one of my favorites!  This recipe is no different.  It smells as wonderful as it tastes!  Feel free to add some chopped walnuts or even chocolate chips into the batter if you like.  Make it yours and enjoy!
