This recipe for Flank Steak Salad comes from Taste of Home which is still one of my favorite magazines and place to find great recipes. We love this salad and it is super easy to make. I changed it up a bit for my family's taste and it is always a big hit!
Flank Steak Salad
2 TBS Lime Juice
2 TBS Soy Sauce (I use reduced-sodium)
5 Cloves Garlic, minced (we LOVE garlic)
1/2 inch Ginger root, peeled and minced
1 lb Beef Flank Steak
- Mix everything together in a large plastic bag and marinate overnight in the refrigerator
- To prepare, discard marinade and broil the flank steak 4 inches from the heat for about 4-6 minutes on each side (this will be medium rare adjust time based on your preference)
- Let stand 10 minutes and then thinly slice against the grain
2-1/2 TBS White Vinegar
1 TBS Soy Sauce
1 tsp Ketchup
1/4 cup Red Onion, finely chopped
2 Cloves Garlic, minced
1/4 inch Ginger root, peeled and minced
1/4 tsp Salt
1/4 tsp Pepper
1 TBS Sugar
3 TBS Olive Oil
- Puree everything except the oil in a chopper
- Once everything is well blended gradually add oil to the mixture in a slow steady stream until fully emulsified
- Set aside until ready to serve salad
- ***NOTE*** if you make this the night before and put it in the fridge the oil will solidify and separate so you will need to bring it to room temp to liquefy and then you will need to blend it again
1 Large Head of Romaine, roughly chopped and cleaned
1 Pint Grape Tomatoes, halved
- Toss romaine and tomatoes in a bowl
- Divide among 6 bowls, drizzle each salad with dressing, and top with slices of steak
Viola! A quick, easy, and healthy dinner everyone will enjoy :)
