Ham and Veggie Pasta Salad

This is another make ahead meal that is easy and convenient.  It's a nice light and refreshing pasta salad that is loaded with veggies.  You can mix and match any veggie you like or do like I did and use up what you have on hand.



Ham and Veggie Pasta Salad
2 cups Broccoli Florets, chopped fine
1 box Spiral Pasta, cooked and drained
1/2 cup Diced Carrots
1/2 Green Pepper, diced
3 Stalks Celery, diced
1/2 cup Frozen Peas
1/2 cup Cheese Cubes (I used some colby jack and garlic monterrey that I had leftover)
8 oz Diced Ham
1/2 cup Mayonnaise
1/4 cup Greek Yogurt
2 TBS Cider Vinegar
1 TBS Dijon Mustard
1 tsp Minced Garlic
1 tsp Dried Dill Weed
1/4 tsp Ground Black Pepper
  • Place broccoli in a pan and cover the bottom with water
  • Bring to a boil, cook for 2-3 minutes until crisp tender, and then drain and cool
  • Combine broccoli, pasta, carrots, green pepper, celery, peas, cheese, and ham in a large bowl
  • In a small bowl combine the remaining ingredients and mix well
  • Pour dressing over pasta and toss to full combine
  • Refrigerate at least 2 hours to fully combine flavors
I refrigerated mine overnight and it was perfect!  I love the great crunch and fresh taste of the veggies without being overpowered by a dressing.  Not to mention since it is packed with veggies you are getting tons of great vitamins and nutritional benefits!
