Greek Salad
1 Large Cucumber, diced into large chunks
1 Large Tomato, diced into large chunks
1/2 Medium Red Onion, finely diced
1/2 cup Kalamata Olives, drained and sliced in half lengthwise
1/2 cup Roasted Red Peppers, drained and sliced
4 oz Feta Cheese
1 Large Bunch of Romaine Lettuce, washed and chopped
- Combine all ingredients in a large bowl and toss well
6 TBS Olive Oil
1/2 Cup Red Wine Vinegar
1 tsp Garlic Powder
1 tsp Dried Basil
1 tsp Dried Oregano
1 tsp Dijon Mustard
1 tsp Lemon Juice
- Combine everything in a small bowl and whisk until blended
I serve the salad into individual bowls and then add the dressing right before serving so the salad doesn't get soggy. I personally prefer a nice crisp salad with some crunch to it ;)
