Corn and Potato Chowder



This recipe was inspired by Mimi's Cafe recipe found HERE.  I was introduced to this recipe from one of the ladies on Spendwise Moms who had this on their meal plan and knew I had to try it.  I did make a few changes to suit our tastes and to use what I had on hand.  I can tell you this is FABULOUS!  This was easy to make and done within an hour including prep and cooking.  That's always a plus because sometimes soups take forever.  Which doesn't bother me because I am such a soup fanatic.

Just don't do what I did and drop your phone in it.  Phones don't like soup and now I can't talk on my phone.  Everything works except now the little headphone/microphone jack is stuck on.  Guess I will be taking it in to see what we can do with it.  Not good :(




Corn and Potato Chowder
1/4 cup butter
3 TBS flour
1 large onion, diced
3 cups chicken stock
9 medium potatoes, peeled and diced
1 can cream corn
1 package frozen corn
2 TBS sugar
2 tsp salt
1/2 tsp black pepper
1 can evaporated milk
1 cup milk

  1. Melt butter over medium heat and whisk in flour.  Make into a rough and cook for about 1 minute
  2. Add onions and cook for about 5 minutes until onion is tender (do not brown)
  3. Add stock, potatoes, corn, cream corn, sugar, salt, and pepper
  4. Using a wire whisk, whisk until smooth
  5. Cover and simmer for about 30 minutes or until potatoes are almost tender
  6. Add evaporated milk and milk and then simmer until creamy and thickened (about 15 minutes)
Such a sweet, creamy, and hearty chowder.  My husband bought a rotisserie chicken and we had sandwiches on the side.  So yummy and easy.  Not to mention most of these ingredients can be found in many homes.  We like thick and chunky chowder so I used the rest of the potatoes in the cupboard.  I think the flavor of the stock added so much more than water would have.  This is definitely a keeper!
