Tonight I made a quick soup to warm everybody up after their snowball fights, snow angels, and all the tromping in the snow. It's super easy, flavorful, and filling. We served ours with a side salad and some bread to complete the meal.
Tortellini Minestrone
1 cup diced carrots
1 cup diced celery
1 large onion, diced
2 TBS oil
5 cloves garlic, minced
salt and pepper to taste
1 tsp oregano
2 cups chicken broth
2 cups vegetable juice
1 can cannellini beans
1 zucchini, chopped
1 bag tortellini
- Heat olive oil over medium-high heat in a soup pot
- Add celery, carrots, and onions and saute until tender about 3-5 minutes
- Add garlic and oregano and cook for about 30 seconds or until fragrant
- Add chicken broth and scrape up any browned bits
- Add vegetable juice and cannellini beans, bring to a boil, and reduce heat and simmer for 10 minutes
- Add zucchini and tortellini and cook for about 10 minutes or until tender and cooked through
- Top with fresh grated parmesan cheese and a spoonful of pesto
Definitely a good soup to have after an evening of playing in the snow! ENJOY!

DeleteI amazed YOU?? Really? With a recipe?? Wow, I am so flattered!! You're such a good cook!! Cooking/baking are SO not my favorite thing and I always aim for easy. I'm always really intimidated by people (like YOU!) who are "real" cooks. :)

I have honestly never thought of myself as a "real cook". I grew up with my grandma so she taught me A LOT :) I will tell you though I can not bake to save my life. Cookies are about the only thing I can bake and even then it can be questionable ;) Thanks so much for your kind words and I hope you are able to make this soup. We loved it and it was really easy to make!

ReplyDeleteGreat dish to warm up with. Your comments about winter and snow made me giggle. Our spring plants are already blooming--it's crazy!
Our trees have buds on them already. Next weekend it is suppose to be near 70 :( After 5 years without winter and then finally moving back to the Midwest I was hoping for winter. Unfortunately our yearly snowfall as been 3.1 inches, which we pretty much got all on the day I made this soup and it was gone the next day! Have a wonderful weekend!
