Chicken Lo Mein

Chicken Lo Mein is a must have whenever we get Chinese take out.  We love it here and there are never any left overs.  So I decided to attempt and make my own.  I must say it was rather successful.  My hubby is working second shift so he hasn't tried it yet, but I am sure he will love it too.

It was rather simple to make.  Just chop everything up ahead of time and cook your noodles while you are chopping everything.  Then you can work on all the quick cook stuff without worrying about chopping and moving from step to step.


Chicken Lo Mein
2 cups cabbage, sliced thin
1 cup carrots, diced
5 garlic cloves, minced
8 oz water chestnuts, drained
1/2 cup green onions, chopped (When I buy green onions I immediately chop mine and put them in a water bottle to freeze then I just sprinkle what I need.  Also I regrow my green onions 3 times by placing the bottoms in a glass of water on my window sill)
2 cups chicken broth
1 lb chicken sliced thin
2 tsp sesame oil
1/4 cup white wine
1/4 cup soy sauce
4 tsp cornstarch
1 tsp ginger
8 oz linguine noodles

  • Prepare noodles as directed on package and then set aside
  • In a small saucepan bring chicken broth to a boil
  • Place 1/2 cup chicken broth in a large skillet, bring to a boil over medium-high heat, and add chicken
  • Cook about 5 minutes or until no longer pink, remove from pan with slotted spoon, and set aside
  • Drain off any liquid from skillet (I didn't have any left)
  • Add 2 tsp sesame oil to skillet and heat over medium-high heat
  • Add garlic and ginger and cook for 30 seconds
  • Add cabbage, carrots, onions, and water chestnuts continue to cook until crisp tender, about 5 minutes
  • Add chicken and pasta and cook until heated about 2 minutes
  • Meanwhile stir soy sauce, wine, and cornstarch in a small bowl and then add to cooled chicken broth and whisk together
  • Stir broth mixture into skillet and cook for about 3 minutes or until thickened
Definitely a quick and easy meal once you get through all the chopping :)  My recipe was inspired by the one found HERE.  You can see you can add pretty much any veggie you want or take away what you don't have or want in there.  I would have thrown in some red pepper flakes, but I know my family are not fans of spice so I didn't.  Maybe next time I will add some for a little "kick"  Just a pinch would do.  I will admit it doesn't need the kick.  It is really good as written and I will definitely make this again!
