Garlic Roasted Potatoes with Onions

Well I went to the store to pick up a 5 lb bag of potatoes and found out they were only 98 cents per bag.  Well naturally I had to buy 2 because that's less than $2 for 10 lbs of potatoes!  Now it looks like we will be eating lots of taters.  Now I love mashed potatoes just like everyone else, but that can get old everyday so I decided to roast some tonight.  You could probably cube the potatoes if you wish, but I enlisted the help of my trusty food processor using the slicing blade.  It cuts the potatoes and onions to perfection!  And by slicing them they just seem to hold more flavor and cook quicker when they are sliced too.



Garlic Roasted Potatoes and Onions
4 medium russet potatoes, scrubbed and sliced about 1/4 inch thick
2 small yellow onions, sliced about 1/4 inch thick
3 tsp minced garlic
3 TBS olive oil
salt and pepper to taste

  • Prepare an 8x8 baking dish by greasing the sides with a little olive oil
  • Layer potatoes in a single layer
  • Sprinkle about 1/3 of the onions over top
  • Sprinkle 1 tsp garlic over potatoes and onions
  • Then drizzle 1 TBS olive oil and salt and pepper to taste
  • Repeat layers until potatoes and onions are gone
  • Bake in a preheated 350 degree oven for 35-40 minutes or until potatoes are tender
There you have it!  A simple and delicious side dish for all those extra taters :)
