Garlic Roasted Potatoes and Onions
4 medium russet potatoes, scrubbed and sliced about 1/4 inch thick
2 small yellow onions, sliced about 1/4 inch thick
3 tsp minced garlic
3 TBS olive oil
salt and pepper to taste
- Prepare an 8x8 baking dish by greasing the sides with a little olive oil
- Layer potatoes in a single layer
- Sprinkle about 1/3 of the onions over top
- Sprinkle 1 tsp garlic over potatoes and onions
- Then drizzle 1 TBS olive oil and salt and pepper to taste
- Repeat layers until potatoes and onions are gone
- Bake in a preheated 350 degree oven for 35-40 minutes or until potatoes are tender
