I did make some changes to make it more of a meal and I really wish we had some frozen peas because those would have went in too. But I was all out so I served it with a side of steamed green beans instead. No one complained :)

Cheesy Scalloped Potatoes with Ham adapted from Skinny Taste
3 lbs yukon gold potatoes (about 7-8)
2 TBS unsalted butter, melted
1/2 tsp sea salt
1 tsp ground black pepper
3/4 tsp garlic powder
1 medium onion, finely diced
1 lb diced 97% fat free ham
2 cups reduced fat shredded cheddar cheese
1 cup 1% milk
1 bay leaf
pinch of nutmeg
2 tsp thyme
- Wash the potatoes and slice them thin, I used the slicer blade on my food processor
- In a large bowl combine salt, pepper, melted butter, and potatoes and toss to coat well
- In a small saucepan over medium heat combine milk, bay leaf, nutmeg, and thyme and bring to a boil
- Remove from heat and set aside
- Meanwhile in a skillet heat 1 tsp olive oil over medium high heat and add onion
- Saute for about 2-3 minutes or until soft and then add ham
- Heat through for about 2 minutes
- In a prepared 9x13 baking dish arrange half the potatoes, followed by half the ham mixture, then half the cheese, and half the sauce repeat another layer
- Place uncovered dish in a preheated 425 degree oven and bake for 30-45 minutes or until potatoes are tender
