Cheesy Scalloped Potatoes with Ham

Cheese, potatoes, and ham!  How could this get any better???  How about a skinnier version without losing flavor???  Sounds good to me!  And sounds like the perfect way to enjoy a one dish dinner.  I never seem to make this except around Easter.  I didn't think you could slim it down so I just decided not to indulge in it too much.  Well I am happy to have found an easy recipe over at Skinny Taste for Skinny Scalloped Potato Gratin.  I was so happy and couldn't wait to give it a try!

I did make some changes to make it more of a meal and I really wish we had some frozen peas because those would have went in too.  But I was all out so I served it with a side of steamed green beans instead.  No one complained :)

Cheesy Scalloped Potatoes with Ham adapted from Skinny Taste
3 lbs yukon gold potatoes (about 7-8)
2 TBS unsalted butter, melted
1/2 tsp sea salt
1 tsp ground black pepper
3/4 tsp garlic powder
1 medium onion, finely diced
1 lb diced 97% fat free ham
2 cups reduced fat shredded cheddar cheese
1 cup 1% milk
1 bay leaf
pinch of nutmeg
2 tsp thyme

  • Wash the potatoes and slice them thin, I used the slicer blade on my food processor
  • In a large bowl combine salt, pepper, melted butter, and potatoes and toss to coat well
  • In a small saucepan over medium heat combine milk, bay leaf, nutmeg, and thyme and bring to a boil
  • Remove from heat and set aside
  • Meanwhile in a skillet heat 1 tsp olive oil over medium high heat and add onion
  • Saute for about 2-3 minutes or until soft and then add ham
  • Heat through for about 2 minutes 
  • In a prepared 9x13 baking dish arrange half the potatoes, followed by half the ham mixture, then half the cheese, and half the sauce repeat another layer
  • Place uncovered dish in a preheated 425 degree oven and bake for 30-45 minutes or until potatoes are tender
The hardest part with this dish is waiting for it to finish baking!  It smells so good!  But I am a sucker for cheesy potatoes and then add ham...YUM!
