Garlicky Spinach Spaghetti

Need a way to get a good meal on the table for less???  I have a few easy go-to meals that work in a pinch.  This garlicky spinach spaghetti is one of those great go-to meals.  It is another one that easily changed up to suit what is in your fridge or pantry.  I decided to make a basic version tonight, but it is great with chicken, turkey, bacon, shrimp, and an endless assortment of veggies.  You could add mushrooms, peas, zucchini, broccoli, or whatever else you have on hand.  But for now this is a great base recipe to get you started.



Garlicky Spinach Spaghetti
1 box smart taste spaghetti noodles
2 TBS olive oil
1 TBS minced garlic
1/2 cup roasted red peppers, chopped
1/4 cup sweet onion, diced
1 TBS dried parsley
2 TBS lemon juice
pinch of red pepper flakes (more if you like a bit of a kick)
1/3 cup white wine
10 oz fresh spinach
1/2 tsp salt
1/4 tsp pepper

  • Prepare noodles as directed on the box
  • Meanwhile in a large skillet heat olive oil over medium-high heat
  • Add onions and red peppers and saute until onions are soft and translucent, about 7 minutes
  • Reduce heat to medium and cook garlic for about 1 minute
  • Add the wine, lemon juice and seasonings and cook for about 5 minutes 
  • Add spinach and cook for about 5 minutes or until spinach is wilted
  • Toss spinach mixture with noodles and serve with fresh grated parmesan cheese
Pretty simple and incredibly yummy!  It's definitely a great meal to add to the rotation.  Especially since you can use just about any leftovers you may have to complete the meal.  

The nutritional value is per serving.  This recipe yields approximately 4 servings.
