Chili

What is better in the fall than a nice bowl of chili topped with cheese and a dollop of sour cream?  I love chili with crackers or tortilla chips and sometimes just bread and butter.  There are many ways to enjoy chili, but nothing warms a crisp autumn night quite like a bowl of chili :)



Chili
2 lbs ground beef
1 TBS olive oil
1 TBS garlic
2 medium yellow onion, diced
2 (14 oz) cans diced tomatoes, undrained
1 (14 oz) can stewed tomatoes, undrained
1 can mild chili beans
1 can hot chili beans
2 TBS Worcestershire Sauce
3 TBS chili powder
1 TBS ground cumin
1/2 TBS ground coriander
1/2 TBS cocoa powder
2 tsp paprika
2 tsp oregano
2 bay leaves
1/2 tsp cinnamon
1/4 tsp ground cloves
1 tsp sea salt
1/2 tsp black pepper


  • Brown ground beef and drain
  • In a soup pot heat olive oil over medium-high heat 
  • Add onion and saute for about 5 minutes
  • Add garlic and cook for 1 minute
  • Combine everything else, mix well, reduce heat to low, and simmer for 1-2 hours
This chili has an awesome depth of flavor.  My husband and kids don't like heat so this is my mild version.  One tip I have to cut the heat is to add some cheese, a dollop of sour cream, tortilla chips, or crackers to top it off.  If you like it hot add some more hot pepper sauce, some chile peppers (your favorite ones), and/or some red pepper flakes.  This is the perfect balance of spice to keep my family happy.
