Lemon and Garlic Chicken

We made this the other night and everyone loved it.  It was juicy with a nice hint of lemony flavor.  My picky little one did require ketchup, but that is nothing new.  He eats ketchup on EVERYTHING!  He would eat ketchup alone if I'd let him ;)

I found a ton of yummy looking chicken "dump"recipes including this Lemon and Garlic Chicken over at When the Dinner Bell Rings.  This recipe I prepared ahead of time when I got some chicken leg quarters for 87 cents/lb.  Definitely a super convenient meal.  Just prepare some brown rice, steamed veggies, and fruit and you have a meal with little effort!


Lemon and Garlic Chicken
1 TBS minced garlic
1/4 cup olive oil
1 TBS dried parsley
3 TBS lemon juice
1/8 tsp ground black pepper
1 lb chicken (I used 2 leg quarters)

  • If you plan on freezing just combine everything and lay flat in the freezer and defrost the night before in the refrigerator and follow baking directions below
  • To prepare place all ingredients in a baking dish, add chicken and toss to coat
  • Place in a preheated 350 degree oven and bake until no longer pink, about 45-60 minutes for chicken pieces and 20-30 minutes for boneless skinless chicken breasts
